<p><strong>Apple and Blackberry Pie </strong><br />
Sweet short pastry recipe</p>

1/3 c sugar<br />
20z butter<br />
1 egg yolk</p>
<p>Mix until light pastry is formed, roll into a sausage and refrigerate for an hour.</p>
<p>Bring out of fridge and cut into 1/2 cm pieces place around the bottom of the pie dish and push into each other until nice and flat and coming up the sides.</p>
<p>Bake for 10 minutes at 180 degrees. Save enough pastry for a lattice top.</p>
<p>Roll out into 14 strips and flatten with your hand (ensure it is on a floured board so they are easy to pick up).</p>
<p>For the filling 6 x Granny smith apples peeled and cut into 8 pieces. Dust these apples in flour.</p>
<p>1 x thumbnail of finely <strong>chopped ginger</strong><br />
100g of caster sugar<br />
150g <strong>blackberries (or blueberries, rhubarb, or any other berry)</strong><br />
1 egg<br />
1/2 tsp ground cinnamon</p>
<p>Simmer together for 5 minutes, pour into lightly baked pie pastry and top with lattice.</p>
<p>Bake until lattice is golden brown&#8230;in a 150-degree oven.<br />

juice and add 1 cup of water per cup of pure juice.</p>
